Roast Veg Pasta
Ingredients:
Veg for roasting; peppers, red onion, leek, squash,courgette.
3-4 garlic cloves.
500g penne pasta.
200g Sunshine Olives.
Fresh or dried thyme.
Handful of Harissa Nuts or pinenuts.
Fresh parmesan or grated.
Salt and black pepper.
Method:
Chunk up all the veg, place into a roasting tray with garlic and pour over some of the oil from the olives. Mix well and season with salt and pepper. Roast for 20-30 minutes at 190C turning half way through. Stir in the olives 5 mins before the end to heat through. Roughly chop harissa nuts or pine nuts. Cook pasta and drain. Add roasted veg, olives, nuts and stir. Season and scatter over thyme, serve with loads of parmesan (ideally freshly grated).
Veggie Mediterranean Tart
Ingredients:
Frozen filo or puff pastry
Basil Pesto
Olive oil
Mozzarella
Sweet Piquante Peppers
Lemon stuffed Olives
Method:
Grease baking tray with olive oil, lay out a sheet of pastry. Brush over a layer of pesto. Pile on sliced mozzarella, peppers and the olives. Bake in a pre- heated at 190C for 40mins. Simple and easy, alternatively add mixed veg or anything you like.
